This is the most requested recipe, I've been asked for it by so many family and friends. Sharing it here for everyone else to try and enjoy with their loved ones. Feel free to switch up some of the optional ingredients, based on what you have on hand and experiment with what you like.

Baking Time 60 - 75 minutes
Yields 10-12 Servings
Ingredients
2 cups of all-purpose flour (substitute with a whole-wheat, oat or almond flour)
3/4 tsp baking soda
1/2 tsp salt
1 cup brown sugar (substitute with 1 cup of maple syrup)
1/4 cup of olive oil (1/4 cup of coconut oil)
2 tbsp ground flax seeds dissolved in 6 tbsp of water (substitute with 2 eggs)
1 1/2 cups mashed bananas (about 3 very ripe bananas)
1/4 cup of plain yogurt
3 tbsp dark rum
2 tsp vanilla extract
1/2 cup shredded coconut
1/4 cup of raisins or dried cranberries (optional)
1/4 cup chopped walnuts (optional)
1/4 cup semi-sweet chocolate chips (optional)
Directions
Preheat oven to 350F
Lightly spoon flour into dry measuring cups, level with a knife. Combine flour, baking soda, salt, stirring with a whisk.
Place sugar and olive oil in a large bowl; beat with a mixer at medium speed until well blended.
Add ground flaxseeds dissolved in water (or add eggs if using), add banana, yogurt, rum and vanilla; beat until blended.
Add flour mixture; beat at low speed until moist.
Stir in coconut and raisins, walnuts and/or chocolate chips until all ingredients have been well combined.
Spoon batter into a 9 x 5 - inch loaf pan lightly coated with oil.
Bake at 350F for 1 hour or until a wooden pick inserted in center comes out clean. Make sure to check and if needed bake for additional 15minutes.
Cool in pan for 10 minutes on wire rack, remove from pan.
Allow of it to completely cool, then slice and enjoy with a cup of tea, coffee or on it's own.
Note- this banana bread is loaded with nutrients and kid approved. It's great for breakfast or as a snack. Enjoy!
