High-Protein White Bean Salad

This is a traditional Bosnian salad, I used to enjoy it as a kid on hot summer days, because it's served chilled. As an adult now, I've upped the nutritional value by adding organic hemp hearts, which makes it a high-protein and quick to assemble, nutritious lunch salad. Serve it with rice and you have complete protein meal. Enjoy!


Prep Time 15 minutes


Yields:  1-2 Servings


Ingredients 


  • 1 can (15oz) organic cannellini beans (31 grams of protein)

  • 3 tbsp organic hemp seeds (10 grams of protein)

  • 1 tbsp ground cumin

  • 1 tbsp ground paprika

  • 1/2 tsp salt

  • 1/2 tsp freshly ground pepper

  • 1/2 cup of distilled vinegar

  • 1/4 cup olive oil

  • 1 medium size purple onion (diced)

  • 1 red pepper (diced)

  • 1/2 cup of freshly chopped parsley



Directions


  • Rinse canned beans

  • In a large bowl add rinsed beans and all the ingredients, mix well until combined.

  • Serve on a bed of greens (Arugula, Spring Greens, Spinach) and enjoy.

  • Per serving you're getting 25 grams of protein, plus fiber and complex carbs. Enjoy!
