This is a traditional Bosnian salad, I used to enjoy it as a kid on hot summer days, because it's served chilled. As an adult now, I've upped the nutritional value by adding organic hemp hearts, which makes it a high-protein and quick to assemble, nutritious lunch salad. Serve it with rice and you have complete protein meal. Enjoy!

Yields: 1-2 Servings
Ingredients
1 can (15oz) organic cannellini beans (31 grams of protein)
3 tbsp organic hemp seeds (10 grams of protein)
1 tbsp ground cumin
1 tbsp ground paprika
1/2 tsp salt
1/2 tsp freshly ground pepper
1/2 cup of distilled vinegar
1/4 cup olive oil
1 medium size purple onion (diced)
1 red pepper (diced)
1/2 cup of freshly chopped parsley
Directions
Rinse canned beans
In a large bowl add rinsed beans and all the ingredients, mix well until combined.
Serve on a bed of greens (Arugula, Spring Greens, Spinach) and enjoy.
Per serving you're getting 25 grams of protein, plus fiber and complex carbs. Enjoy!
