Green Nourishment Bowl

Need a quick lunch, that's nourishing and will sustain your energy through the busy day?


Green Nourishment Blow will last you all week (make extra, and store in a refrigerator up to 4 days!). This nourishment bowl is loaded with complex carbs, perfect during a #LutealPhase, rich in protein and packed with fresh greens that will leave you feeling nourished and light.


Prep Time 30 minutes


Yields:  4-6 Servings


Ingredients for Savory Brown Rice


  • 1 cup of savory brown rice (see directions below for prep)

  • 1 tbsp white vinegar

  • 1 tbsp olive oil

  • 1 tbsp cumin seeds

  • 1 tsp salt

  • Note- substitute rice for quinoa, if you prefer. Ingredients for Green Nourishment Bowl

  • 1 cup of savory brown rice (as instructed above, rice can be prepared ahead)

  • 1 cup of frozen or fresh peas

  • 1 cup of cooked chickpeas (1 can approx. 15oz)

  • 1/2 English cucumber, diced

  • 1/4 cup of golden raisins

  • 1/4 cup of pine nuts, toasted

  • 1/2 cup homemade pesto (or store bough vegan pesto)

  • 1/2 cup of freshly chopped parsley

  • 1/2 cup of sesame seeds and 1/2 cup of sunflower seeds (#LutealPhase)


Directions


  • Rinse dry brown rice with cold water.

  • Place rinsed rich with 2 cups of cold water in a pot on a stove, add vinegar, oil, cumin seeds and salt. Bring to a boil, then reduce to simmer until rice is cooked. Let cool before mixing with remaining ingredients in a large bowl.

  • Defrost 1 cup of frozen peas, or use 1 cup of fresh peas.

  • Rinse chickpeas, if using canned, and add to a large mixing bowl with peas.

  • Dice cucumber, add to peas and chickpeas.

  • Toast pine nuts in a non stick pan until golden and fragrant, let cool.

  • Chop up fresh parsley, add to mixing bowl with the rest of ingredients.

  • Mix in 1/2 cup of pesto to cooled rice, add in seeds and mix with to the rest of ingredients in a large mixing bowl.

  • Sprinkle with toasted pine nuts and enjoy.
