These Chocolate Vanilla Coffee Bars are a great homemade alternative to store bought energy bars, and a perfect pick me up morning snack or anytime a day. Use Decaf coffee if you've eliminated caffeine from your diet, and I promise: You won't miss a thing! You'll still get the full bold flavor of these delicious bars! Enjoy!

Yields 10-12 Servings
Ingredients
1/3 cup chopped raw almonds
2 tbsp of ground coffee beans (optional: use decaf coffee)
2 tbsp of pure vanilla extract
1 1/3 cup rolled oats
1 cup crispy rice cereal
1/4 cup of non-dairy chocolate chips
1/4 cup unsweetened shredded coconut
1/2 tsp salt
1/2 cup maple syrup
1/4 cup smooth roasted almond butter (optional; peanut butter or cashew butter)
2 tsp virgin coconut oil
Directions
Preheat oven to 325F
Use a baking sheet and spread the almonds evenly.
Toast the almonds in the oven for 10min until they are fragrant.
Let the almonds cool while you prepare the rest of the Chocolate Vanilla Coffee Bar mixture.
In a large bowl, stir together: ground coffee, oats, cereal, chocolate chips, shredded coconut and salt.
In a small pot, stir together: maple syrup, almond butter, coconut oil and vanilla. Bring to simmer over low heat, stirring until everything is well combined. This should take just a minute or two, be careful not to burn it.
Add toasted almonds to the dry ingredients and stir.
Immediately pour the wet mixture over and stir until everything is well mixed.
Scoop the bar mixture into a shallow square glass pan. Use your fingers to press down firmly the mixture, the more you pack down the mixture, the better the bar holds together.
Place the Chocolate Vanilla Coffee bar in the freezer for 10-15min.
Use a chef knife or pizza cutter to cut into granola bar sizes.
