Prep Time 15 minutes

Baking Time 10 minutes

Yields 10-12 Servings

Ingredients

  • 1/3 cup chopped raw almonds

  • 2 tbsp of ground coffee beans (optional: use decaf coffee)

  • 2 tbsp of pure vanilla extract

  • 1 1/3 cup rolled oats

  • 1 cup crispy rice cereal

  • 1/4 cup of non-dairy chocolate chips

  • 1/4 cup unsweetened shredded coconut

  • 1/2 tsp salt

  • 1/2 cup maple syrup

  • 1/4 cup smooth roasted almond butter (optional; peanut butter or cashew butter)

  • 2 tsp virgin coconut oil

Directions

  • Preheat oven to 325F

  • Use a baking sheet and spread the almonds evenly.

  • Toast the almonds in the oven for 10min until they are fragrant.

  • Let the almonds cool while you prepare the rest of the Chocolate Vanilla Coffee Bar mixture.

  • In a large bowl, stir together: ground coffee, oats, cereal, chocolate chips, shredded coconut and salt.

  • In a small pot, stir together: maple syrup, almond butter, coconut oil and vanilla. Bring to simmer over low heat, stirring until everything is well combined. This should take just a minute or two, be careful not to burn it.

  • Add toasted almonds to the dry ingredients and stir.

  • Immediately pour the wet mixture over and stir until everything is well mixed.

  • Scoop the bar mixture into a shallow square glass pan. Use your fingers to press down firmly the mixture, the more you pack down the mixture, the better the bar holds together.

  • Place the Chocolate Vanilla Coffee bar in the freezer for 10-15min.

  • Use a chef knife or pizza cutter to cut into granola bar sizes.

  • Enjoy!
